Banana Carrot and Oat Cake (With Lemon Icing)
Cake ingredients:
1 1/2 cups wholemeal self raising flour
1/2 cup rolled oats
pinch of salt
1 tsp cinnamon
1/2 cup non-dairy milk (I used soy)
1/2 cup raw sugar
1 tsp vanilla extract
3 large over ripe bananas, mashed
1/2 cup fresh carrot, grated
Icing
plain icing sugar
margarine
lemon juice
Method:
Mash up your bananas in a large bowl, mix in non-dairy milk and vanilla extract until well combined.
Add all the dry ingredients and form a dough
fold the grated carrot in gently
Pour cake mixture into a well greased cake pan and bake at 180 degrees celsius (or 350 farenheit) for about 40 mins
Icing:
In a smaller bowl add about a 1/3 cup of icing sugar with a tablespoon of margarine. Fold together well.
Add tablespoon or so of lemon juice and mix, if the mixture is too runny add more icing sugar. I never use exact measurements for my icing so its really just until you find a good liquid to sugar ratio, so that its not runnier or thicker than you’d like it to be.
I made the very silly mistake of being too impatient to wait for the cake to cool before trying to ice it. Don’t make the same mistake I did!

Sometimes I drink too much vodka or eat 3 servings of macaroni and cheese in one sitting, but by far the most unhealthy habit I have is comparing myself to others.

why is it a compliment to say someone is skinny

like today alright, i was trying on shorts on my break (i work in a clothing store) because i wore a maxi skirt and it was 2 hot inmorewaysthanoneha ok and i grabbed the size 4 and the 2, thinking the 4 would probably work. nope, huge. tried on the 2s. still a little baggy, but not bad. was going to get the 2s but a coworker sugests i try on the 0s (smallest womans size we carry). so i do, just in case. ta da they fit slightly better than the 2s. other coworker says i must be ‘so happy to fit the size 0’ and i’m like why. like yeah sure i’m happy because i found a dang pair of shorts that fits well. like i don’t care if they happen to be a size 0. whatever. in another store, i’m a size 7. even in our store there are some jeans that i wear a size 6 or 8 in. so why does it matter so much? why do we put so much emphasis on the number instead of how comfortable we feel in something?
